Fajita lasagne recipe

Serves 4-6

Prep time: 25-30 minutes

Cook Time: 5-10 minutes

 

Ingredients:

  • 1 pepper diced

  • 1 onion diced

  • 500g lean turkey mince

  • 1 tin of chopped tomatoes

  • 1tbsp tomato puree

  • 1 pack of wholemeal tortillas

  • Salsa (for topping)

  • 30g reduced fat cheese

  • Seasonings

  • Microwave brown rice

 

Method:

  1. Spray a frying pan with some rapeseed oil fry light (if you have it) and put it on a low heat.

  2. Whilst the pan is heating up dice the onion and pepper and then cook for a few minutes.

  3. Once you have cooked the veg add the turkey mince and cook it through. 

  4. Once cooked through, add the chopped tomatoes, tomato puree and seasoning.

  5. When the dish starts to bubble continuously and thicken, take it off heat to start preparing the lasagne.

  6. Preheat the oven to 200 degrees.Depending on the size of your dish you need to cut the tortillas in half. You also need to grate 30g of cheese.

  7. Now comes the layering!

  8. You should aim to get 3 layers of tortilla and fajita mix. Split the dish into thirds and put one third into the bottom of the dish and spread evenly. Then place the tortillas on top to cover that layer. Repeat this 2 more times.

  9. The top layer should now be tortillas. Spread some salsa across the top and sprinkle the cheese evenly.

  10. Put in the oven until the cheese browns slightly and the fajita mix is bubbling.  

  11. When it is almost ready to serve, put the rice in the microwave for 2 minutes and then dish up!
